The macroporous carrier material of the particulate immobilised lipase preparation is silica- or silicate- based and exhibits a pore diameter which is between 5 and 45 times the diameter of the lipase molecules. The lipase preparation is inexpensive and can exhibit a high specific activity. It can be produced by bringing the carrier material into contact with an aqueous solution of the lipase. The lipase preparation can be used for transesterifying fats, hydrolysing fats and synthesizing fats.
