PROBLEM TO BE SOLVED: To provide a fibrous structure having a soft texture so as to remind pulp fibers of a mango, a peach, a melon, etc., in a simple manufacturing process, and food and drink including the fibrous structure having a soft texture.SOLUTION: The fibrous structure having a soft texture is manufactured by preparing a mixture obtained by mixing a composition including (i) protein and (ii) xanthan gum with a composition including (iii) acid and having a pH of 5 or less under a condition of more than 5°C and less than 55°C or by preparing a mixture obtained by mixing a composition including (ii) the xanthan gum and (iii) the acid with a composition including (i) the protein and having a pH of 5 or less under a condition of more than 5°C and less than 55°C.SELECTED DRAWING: None |
