A dietary fiber-contg. bean curd is prepd. by (a) soaking soybean or bean curd refuse in the water and pulverizing to obtain the slurry, (b) softening and sterilizing the slurry at 80-121 deg.C for 30-60 min. and grinding, (c) homogenizing the grinded slurry under 1500 Psi - 10000 Psi pressure, and (d) coagulating the homogenized slurry and forming. |
