PURPOSE:To propare KONJAK jelly having rich taste and flavor, rationally packageable in a box in excellent space efficiency and useful as health food, etc., by boiling tuberous root of devil's tongue with deaerated water free from dissolved gas, grinding the boiled root and coagulating the obtained pasty KONJAK. CONSTITUTION:The objective KONJAK jelly can be prepared by using deaerated water free from dissolved gas in one or more steps comprising the boiling of the tuberous root of devil's tongus, grinding of the boiled root and the addition of a coagulant such as lime milk to the obtained pasty KONJAK to effect the coagulation of the KONJAK paste. |
