The present invention relates to a guillotine for cutting a strand of dough that is being conveyed by a conveyor belt 1, which guillotine comprises a frame 3 and a cutting edge 4 with its drive devices mounted in the frame, which cutting edge performs an essentially vertical working stroke. The invention is characterised in that, in order to achieve a cutting motion of the cutting edge 4 that follows the movement of the conveyor belt 1, the fixing bar 11 of the cutting edge 4 is rotationally spring-loaded about its longitudinal axis, on which fixing bar a guide plate 13 is fitted, which bears against a double eccentric 12 arranged on the drive shaft 7 under the effect of the spring forces, as a result of which arrangement the cutting edge 4 during the initial phase of its downwards movement is displaced somewhat counter to the direction of movement of the conveyor belt 1 and during the final phase of its downward movement and the initial phase of its upward movement is displaced somewhat in the direction of movement of the conveyor belt 1, and during the final phase of the upward movement is displaced counter to the direction of movement of the conveyor belt 1. <IMAGE>
