Abattoir equipment taking at least one reading from the surface of a half carcase (36) suspended from a hook (12) travelling on a rail (14). An inclined table (24) has two inclined conveyors (26, 28), driven by a motor at the same speed as the hook (12). At least one electronic camera (40, 44) and associated light source are fixed to the table such that the light field and the field of vision cover the required zone (46, 48) of the carcase. The light source highlights at least one characteristic of the surface reading. The camera produces, via a matrix of pixels, a series of signals representing luminous intensity and coordinates. Signals from camera and a balance are supplied via electronic circuits to a computer equipped with the means of analysing the signals. Pref. a magnetic detector (20) sensitive to passage of the hook is located on the rail. An optical rotation detector is affixed to the stem of the motor driving the two conveyors. Electronic circuits, including a counter, are connected to the detectors and initiate operation of the cameras (40, 44). For each area chosen, the computer treats information from the cameras statistically relating to the weight of the carcase and the probable edges of the areas to determine probable surface and shapes of the areas.
