The red pepper paste with pumpkin is prepd. by (a) washing pumpkin, peeling, removing their cellulose and crushing, (b) steaming the obtd. crushed pumpkin at 100 deg.C for 40-50 min., (c) mixing the obtd. steamed pumpkin 36-40 % with glutinous rice powder, barley powder 15-20 % and soybean malt powder 20-25 %, and standing at 60-65 deg.C for 3-4 hrs., and (d) adding red pepper powder 25-30 % and 25-30 % edible salt into the obtd. mixt., and stirring to obtain the final product. |
