PROBLEM TO BE SOLVED: To provide a production process in which a high-purity N-acylamino acid having a good color tone can be produced with high yield.SOLUTION: A production process for N-acylamino acid is provided in which an acylation reaction between an amino acid represented by formula (1) and a fatty acid chloride having a carbon number of 16 to 22 is performed in a mixed solvent between a water and an organic solvent and having an octanol/water partition coefficient of 1.6 to 3.5 under an alkali condition.
