Encapsulation method in which the encapsulating means comprises a beta-glucan-enriched preparation of oats. The encapsulating means is hydrated in a weakly basic solution and either mixed with the substance which is to be encapsulated or the substance which is to be encapsulated is added after hydration and the viscous mixture is fixed and the capsules dried. Capsules produced in this way do not disintegrate in acidic conditions and the compounds encapsulated therein retain their biological action. The capsules are hydrated again in weakly basic conditions and the encapsulated compounds are released. A number of different compounds are suitable for encapsulation, in particular edible preparations with probiotic, medicinal or nutritional effects.
