This process comprises: a) the culture of microorganisms capable of moderately degrading the lactone molecules, which are chosen from the genera Sporidiobolus or Fusarium, in a culture medium containing at least one precursor of R-gamma-decalactone chosen from the group comprising ricinoleic acid and lesquerolic acid, their salts and their esters with C1 to C3 alcohols, b) the extraction, during culture, of the R-gamma-decalactone produced by the said microorganisms, with an organic solvent separated from the culture medium by a semipermeable membrane, the extraction solvent being substantially immiscible with water.
