SUBSTANCE: enzymic hydrolyzate is prepared from cucumaria by addition of proteolytic enzyme from crab viscera to the milled raw at amount 1000-35000 PE/1 kg cucumaria at 30-45 C for 14-24 h followed by enzyme inactivation by heating. Lactic acid foodstuffs for curative-prophylaxis purpose were prepared by addition of cucumaria hydrolyzate to milk at content triterpene glycosides 500-600 mcg/ml at amount 10-20% of milk mass followed by pasteurization, addition of lactic acid ferment standard mixture and incubation. Method of triterpene glycosides assay involves preparing total glycosides purified from inert components on Teflon powder and their determination by reverse HPLC method in 45% alcohol at flow rate 1 ml/min, detection is carried out at 220 nm, time retention for the main glycoside is 2.23 min using preliminary calibrated plot.
