The procedure for harvesting bunches of grapes (G) carried by a stalk (T) comprises cutting the stalk in a chosen point. A means of location (12), containing a substance emitting a ray in the visible or invisible spectrum, is placed on the desired cutting points. The cutting operation consists of simultaneously cutting the stalk in two places either side the location means. The harvesting machine comprises a sensor sensitive to the location means. This sensor is connected to signal generators which guide a cutting tool (6) to the corresponding cutting point. These generators also control the activation of the cutting tool when it has reached the chosen position. The harvesting procedure requires less personnel over a very short period and provides higher quality of harvesting than existing procedures.
