Food disinfected by repeated application of saturated steam. In a continual or quasi-continual process and assembly to disinfect the surface of a food or a body, a supply of the food or the product is fed through a treatment chamber in which it is exposed to saturated steam on a quasi-continuous basis. Alternatively, the food or product are introduced to the chamber and are treated in batches. The saturated steam condenses on the food or product surface. Each fresh influx of saturated steam is allowed to condense and drain with the esp. bacterial load before the next fresh influx of steam. The steam treatment is repeated at least twice, pref. 6 to 50 times.
