PROCESS FOR PREPARING ALKYL BETA-D-FRUCTOSIDE USING LEVANSUCRASE

PURPOSE: A method for producing alkyl beta-di-fructoside using levansucrase is provided, thereby the novel alkyl beta-di-fructoside can be produced in higher yield. CONSTITUTION: The alkyl beta-di-fructoside is similar to alkyl glucoside which is used for drugs, foods and cosmetics as sugar surfactant and represented by formula (I), in which R is methyl, ethyl, glycerol, ethyleneglycol or propyleneglycol. The alkyl beta-di-fructoside is produced by the steps of: adjusting the hydrogen concentration of reaction solution containing 20 to 80%(v/v) of alcohol to pH 5.8 to 6.2 with MES buffer solution; and reacting 50 to 100 g/l of sugar with levansucrase in the reaction solution at 10 to 20 deg. C, in which the alcohol is selected from the group consisting of methanol, ethanol, ethyleneglycol, propyleneglycol and glycerol.
