PURPOSE: Provided is a method for manufacturing vinegar maintaining original elements of the plant and other elements which are produced during fermentation with prickly ash and conducive to one's health. CONSTITUTION: The method for manufacturing vinegar with prickly ash is comprised of the next steps of: i) washing rice, polished barley, or glutinous rice five times as much as prickly ash, dipping the rice into water for 10 hours, steaming the rice, and cooling the steamed rice; ii) mixing leaven 2.5 times as much as prickly ash with the steamed rice, adding the mixture into a fermenter with water, and fermenting the rice at 25-30 deg.C for 3-5 weeks; iii) filtering fermented substances, and fermenting the filtrate at 15-20 deg.C for 6-20 months; and iv) obtaining vinegar by filtering fermented solution with minute filters. |
