PROBLEM TO BE SOLVED: To provide a cooling method for producing a steel plate having excellent flatness without developing defective shape, such as warping, bending, in the case of control-cooling the steel plate. SOLUTION: In the cooling method, where the hot-rolled high temperature steel plate is cooled by supplying the cooling water from nozzles while carrying the plate in a cooling device provided with a plurality of cooling zones having the upper and lower nozzles with controlled spraying water amount from the nozzles in the advancing direction of the steel plate, based on the difference between the predicted temperature and the actual temperature of the surface of the rolled steel plate after completing the rolling, the water spraying ratio at the upper and the lower parts in the cooling zones of the cooling device, is set. Further, temperatures of the upper and the lower surfaces of the steel plate are measured at the inlet side of each cooling zone, and based on the difference between the upper and the lower surface temperatures, the correction of the ratio of spraying water at the upper parts to that of the lower parts in the cooling zone is performed to each cooling zone.
