PURPOSE: A manufacturing method of cucumber alcoholic beverage is provided, thereby lowering alcohol concentration in the alcoholic beverage, improving flavor of alcoholic beverage, and reducing hangover after drinking the alcoholic beverage. CONSTITUTION: The manufacturing method of cucumber alcoholic beverage comprises the steps of: washing cucumber with water, and removing 0.3 to 0.5 cm of the skin of cucumber; drying the skin of cucumber; pulverizing the dried cucumber skin; adding 20 to 30g of pulverized cucumber skin into 300 ml of soju(distilled liquor) and maturing the mixture at 2 to 5 deg.C for 15 to 20 days; and removing the pulverized cucumber skin from the matured soju.
