PROBLEM TO BE SOLVED: To provide a cutting device, and a cutting method, capable of effectively preventing chipping of the edge of a cutting blade and a scratch of the cutting end surface of a product. SOLUTION: This cutting device C is for cutting the moving long product P in a prescribed length; and has the cutting blade 10 for cutting the product P in the crossing direction, and a pair of clamps 15 and 16 arranged on the upstream side and the downstream side from the cutting blade 10 in the moving direction of the product P, so as to be movable, and relatively approachable-separable, in synchronism with the product P. The cutting device is characterized by forming a prescribed interval between the cutting end surface of the product P and the cutting blade 10, by moving the other clamp 16 and the cutting blade 10 in the direction for separating from one clamp 15, and moving the cut product P in the direction for separating from the cutting blade 10, simultaneously when completing cutting by the cutting blade 10, while gripping the product P by the pair of clamps 15 and 16.
