PROBLEM TO BE SOLVED: To provide a gas barrier laminate excellent in transparency and having high-degree gas barrier properties though sugars or a water soluble polymer is used, and a packaging material using it. SOLUTION: The gas barrier laminate is constituted by laminating a gas barrier layer (A), which is formed from gas barrier layer forming coating containing a polyalcohol type polymer and a polycarboxylic acid type polymer, at least one stretched plastic film (B) and a heat-sealable plastic layer (C).
