A cooking fat or oil contains sufficient of a citrus oil to reduce objectionable room odours when it is used for frying. The composition may include from 100 to 1000 p.p.m. of the oil of lemon, orange, lime, grapefruit or tangerine or synthetic imitations thereof; it may also include lactones and ketones or ester precursors thereof as flavouring agents. In examples, citrus oils are added to plastic shortening, natural and hydrogenated soya bean oil, and refined corn oil. |
