PURPOSE:Rice flour, buckwheat flour for ''soba'', potato powder, ''konnyaku'' devil tongue flour, flavors, modifiers and water are mixed, boiled, made into noodle bands and cut into vermicelli, thus giving ''soba'' of rice that has high storage stability, good taste and crispness. CONSTITUTION:To the starting material of a mixture consisting of 4-6 parts, preferably 5 parts of rice flour, 5-3 parts, preferably 4 of buckwheat flour, and 1 parts of potato powder, are added flour of ''konnyaku'' devil tongue, flavors, modifiers and water and they are mixed. The mixture is boiled for 10-20min, kneaded, and extruded with pressure into noodle bands. After cooled, the noodle bands are cut into vermicelli of a predetermined thickness. The amount of ''konnyaku'' flour added is preferably 0.1wt% based on the starting material consisting of rice flour, buckwheat flour and potato powder. The flavors are, e.g., table salt, sodium glutamate, etc., and the modifiers are, e.g., propylene glycol, sodium alginate, etc. |
