<p>Tray is for supporting bread dough sticks in a bakery proving chamber. Tray is of the type comprising a rigid rectangular frame surrounding on open grill of parallel wires. Textile sheet is laid on top of the grill and pinched up into parallel corrugations which run transversely of the wires. A dough stick for french bread is laid along the base of each corrugation channel. Opposite sides of the textile sheet at the ends of the channels are now supported on flat strips, pref. welded to the frame. Strips make it much easier to grip the sheet to form the corrugations.</p> |
