An energy saving apparatus for frying snack foods comprises slicing and rinsing sections 1, 2 followed by blanching and frying sections 3,4. Hot exhaust gases from the frying section 4 are used to heat water in a heat exchanger 14, heated water from the exchanger 14 being passed to a steam generator 12.
