PURPOSE:To prepare noodles having excellent taste and flavor and high preservability, by mixing wheat flour with wine, and making noddles from the mixture. CONSTITUTION:A mixture of wheat flour, wine, and sorbitol, is mixed with saline water of about 10 deg. Baume, and kneaded for about 7-15min. The dough is rolled with a roll, and slit with a slitter or a kitchen knife. As an alternative method, noodles containing alpha-starch can be prepared by the extrusion process (the process used in the preparation of spaghetti). |
