PURPOSE:Adlay grains are soaked in water, their starch is converted into the alpha- form, the resultant adlay grains are pressed and swollen with a hot air so that they give soft texture and comfortable viscosity and elastisity after restored with hot water by simple operations. CONSTITUTION:Adlay grains are washed with water, soaked in water for more than 1hr so that the water content becomes 30-40%. The soaked adlay grains are steamed at 100-140 deg.C for 3-60min or boiled at 90-130 deg.C for 10-120min so that the starch is converted into the alpha-form and the water content is adjusted to 40- 60%. Then, the water content is reduced to 25-40% and the grains are passed through 0.1-1.0mm. gap between rollers. Then, the water is further reduced to 10- 25% and the grains are swollen by treating with a hot air at 160-450 deg.C for 10- 60sec. |
