PURPOSE:To obtain a packaged bean curd with a high efficiency, by removing seed coats and embryo buds from soybeans, dipping the resultant soybeans in hot water, boiling the soybeans to denature the soybeans by heating, removing bean curd refuse, sterilizing the resultant soybean milk, mixing the soybean milk with a coagulating agent, filling the resultant mixture in a container, and coagulating the mixture in the container. CONSTITUTION:Soybeans are fed from a raw material soybean storage tank 1 to a soybean cleaning machine 2 to remove impurities. The resultant soybeans are then fed to a skin peeling and embryo bud removing machine 3 to remove the seed coats and embryo buds therefrom. The soybeans are crushed in a crusher 4 and dipped in hot water at 80-85 deg.C in a dipping and storage tank 5 to absorb water. The soybeans after absorbing water are then boiled or steamed in a boiling or steaming vessel 6 and denatured by heating, and the bean curd refuse is removed to give soybean milk, which is sterilized in a sterilizing and cooling machine 4, directly cooled and mixed with a coagulating agent 10 in a mixer 9, filled in a packaging container and sealed in a soybean milk filling and mouth sealing machine 11, coagulated and sterilized in a coagulating and sterilizing machine 12 and packaged to give the aimed product. Water used in the sterilizing and cooling machine 8 for heat exchange is heated in a preheating tank 14 and fed to the dipping and storage tank 5 for use as a dipping water for the soybeans. |
