PURPOSE:To obtain green tea useful as improved healthy tasty drink, by heating tea leaves with steam, rubbing them roughly, rubbing them successively, freezing prepared rubbed tea leaves at a specific temperature, heating them in a vacuum atmosphere to carry out vacuum drying. CONSTITUTION:Picked tea leaves are rapidly heated with steam, cooled and dried with warm air, roughly rubbed, and rubbed at normal temperature. The rubbed tea is frozen at <=-10 deg.C, and stored in a refrigerator in frozen state. An amount required for production is taken out as necessary, is put in a vacuum atmosphere in a chamber, the temperature of the chamber is gradually raised, heated at about 40 deg.C, and it is subjected to vacuum drying, to give the desired green tea having about 2wt% water content.
