PROBLEM TO BE SOLVED: To provide a sheet-like plastic oil-and-fat composition capable of obtaining a layering bakery product, excellent in extensibility and workability during a roll-in time, even when using much palm-based fat raw material, and having a uniform internal phase with excellent texture.SOLUTION: A sheet-like plastic oil-and-fat composition contains a fat A mainly composed of a palm-based fat, as much as 1-20 mass% based on an oil content: the fat A is a random ester exchange fat satisfying following conditions (a) to (c); (a) S2U is 20-60 mass%, (b)SU2/S2U=0.2-0.6 and (c) P2St/PSt2=1-4.SELECTED DRAWING: None |
