PURPOSE:To provide an antifreezing agent for use in aqueous media, safe to living body, effective with minimal amount, also advantageous in terms of cost because of mass productivity, consisting of protein enzyme-modified with amino acid ester. CONSTITUTION:The objective antifreezing agent consisting of protein (e.g. casein, gelatin, albumin, lactoalbumin, soybean protein, fish protein) enzyme-modified with an amino acid ester prepared from 8-16C aliphatic alcohol and amino acid such as leucine, alanine or norleucine. For example. the objective agent can be prepared by combined addition, to gelatin with papain, of leucine dodecyl ester. EFFECT:Storable in high stability in an antifreezing state at -5--10 deg.C, thus leading to significant reduction in energy cost for cooling. USE:For low-temperature storage of fresh foods, processed foods, living body tissues, cosmetics, oils, etc.
