PURPOSE:To improve bitterness of aloe extract useful as a food or drug, by treating the aloe extract with a microorganism or an enzyme, so that glycoside is hydrolyzed. CONSTITUTION:Aloe extract is treated with a microorganism (e.g., Aspergillus niger, etc.) having a hydrolyzing activity against glycoside in the aloe extract or a hydrolase (e.g., alpha-1,2-rhamnosidase, beta-glucosidase, etc.) preferably at 3- 10pH at 20-70 deg.C. |
