PURPOSE:To produce a citrus fruit jam, capable of retaining the original shape of a citrus fruit and having bright orange color and luster and good flavor, by gelatinizing a mixture of preserved type pulp with juice sacs, fruit juice, etc., while heating. CONSTITUTION:The exocarp of a citrus fruit, e.g. Citrus unshiu or grapefruit, is peeled and endocarp is removed. Sugar is then added and permeated into the pulp to give a preserve type pulp. Pulp of a citrus fruit is separately separated into juice sacs, which are heat-treated in a sugar solution in a high concentration. The above-mentioned heat-treated juice sacs, sugar, pectin, sour agent and fruit juice are then added to the above-mentioned preserve type pulp and the resultant mixture is gelatinized while heating at <=80 deg.C, preferably 75-80 deg.C. |
