PURPOSE:The titled novel preservative protecting foods from damages of microorganisms and insects and bad influence of oxygen, comprising an ethanol vapor evolving substance, a disoxidant consisting of metallic powder and an oxidation promotor for the metallic powder and a polyallylamine as essential components. CONSTITUTION:Ethanol is supported on porous powdery silicon oxide by gradually adding ethanol to the silicon oxide while stirring to give a powder ethanol carrier which is used as an ethanol vapor evolving substance. Then the substance is uniformly blended with metallic powder (e.g. iron powder, etc.) and an oxidation promotor (e.g. salt, etc.) for the metallic powder and a polyallylamine carrier obtained by supporting an aqueous solution of polyallylamine on powdery silicon oxide to give the aimed preservative for foods. The preservative is preferably packed into an air-permeable container and used.
