发明名称 CONCENTRATED LIQUID FOOD
摘要 PURPOSE:To obtain a concentrated liquid food preservable at room temperature for 1 year without causing separation, precipitation and coagulation and keeping good emulsion stability even after sterilization treatment, by increasing the concentration of mineral, especially potassium and using in combination with a chelating agent. CONSTITUTION:A concentrated liquid food is prepared by conventional method using protein or its decomposition product, carbohydrate, lipid, vitamin and mineral as main components. In the above process, the content of potassium mineral is adjusted to 0.07-0.30wt.% and the amount of minerals other than potassium is adjusted to 0.25-1.0wt.% based on the whole composition. In addi tion to the above, a chelating agent such as sodium metaphosphate or sodium pyrophosphate is added in an amount of 0.02-0.15wt.%.
