PURPOSE:To obtain the subject coating materials useful for gyoza (dumpling stuffed with minced pork), shao-mai or wang-tang, etc., without deterioration on leaving for a long period of time and capable of being flexibly preserved by adding beta-amylase agent to mixture of starch in alpha-state and raw starch, rolling and shaping. CONSTITUTION:A beta-amylase agent is added to a mixture of starch in alpha-state and raw starch and mixed with water, as necessary, then preferably acted by enzyme, thus rolled and shaped to afford the aimed coating materials. |
