PURPOSE:To enable continuous production of electrically processed food having constant quality, by subjecting a food ingredient sandwiched between both sides of a pair of top and bottom electrode materials connected elastically in an electrical insulating state to steam sterilization under heating by action of electricity application made simply by insertion of a plug. CONSTITUTION:The food ingredient A fed in the electrical insulating container 1 having open top and bottom faces is positioned through the salt water-containing electrode materials 2 and 3 at both the opposing sides, sandwiched by a pair of top and bottom electrode materials 4 and 5 to be connected elastically in an electrical insulating state, the plug 18 is inserted into the socket 9 attached to the top electrode material 4, electricity is applied to the space between the top and the bottom electrode materials, so that the food ingredient is sterilized with steam under heating. During processing by electricity application, juice spreading from the food ingredient is stored in the juice storage chamber 12 set between the bottom electrode material and the container 1 as it is received by the bottom electrode material. Thus, an electrically processed food having constant quality is produced continuously, occurrence of leak of electricity, etc. caused by spreading juice is prevented, and production operation can be carried out safely and hygienically. |
