In an apparatus for the extraction of coffee, consisting of six extraction cells (1,2,3,4,5,6), there are provided, after hot cells (1, 2), means (7) for reducing the rate of percolation into at least one cell (3) downstream of said hot cells. In particular, the means (7) are an evaporator. After at least one cell (3), where the rate of percolation has been reduced, means (8) are provided to regulate the percolating flowrate into the cells downstream.
