PURPOSE:To obtain the subject food having specific water-content and bulk density and giving chewy feeling by preparing a specific paste of ground vegetables, etc., and drying the paste. CONSTITUTION:The objective food having a water-content of 1-6wt.% and a bulk density of 0.3-0.8g/ml is prepared by grinding vegetables (e.g. spinach and burdock) and/or fruits (e.g. apple and banana), preparing a paste of the ground product having a water-content of 50-85wt.% (preferably 60-80wt.%) and a carbohydrate content of 5-35wt.% (preferably 10-25wt.%) (if necessary, the paste may be added with 1-5wt.% of proteins and 5-15wt.% of oil and fat based on the paste) and drying the paste. The content of the vegetable and/or fruit in the paste is preferably 50-100wt.%. |
