PURPOSE:To obtain the subject food useful as a health drink, health food or a seasoning without using a decomposition apparatus and fuel by adding acetic acid to fish body composed of fresh fish or shellfish in a closed vessel to effect the decomposition and liquefaction of the meat and separating and purifying the liquefied fish meat component from the obtained decomposition liquid. CONSTITUTION:Fresh fish body of sardine, mackerel, saury, etc., is decomposed and liquefied with acetic acid in a closed vessel. The objective food is prepared by separating the liquefied fish component from the decomposed liquid in purified state. The concentration of acetic acid in the decomposed liquid is preferably 2.7-5wt.%. |
