PURPOSE:To prevent a juice from putrefying even in preservation at ambient temperature by cooling the juice of a fruit or vegetable stored in a pressurizing container to a specific low temperature, simultaneously sealing gaseous carbon dioxide in a high-pressure state in the pressurizing container, rapidly decompressing the interior of the pressurizing container and then purging the carbon dioxide in the juice with nitrogen gas. CONSTITUTION:A juice of a fruit or vegetable stored in a pressurizing container is cooled to -5 to +10 deg.C and gaseous carbon dioxide in a high-pressure state is simultaneously sealed in the pressurizing container. After the passage of a prescribed time, the interior of the pressurizing container is rapidly decompressed and the gaseous carbon dioxide in the juice is then purged with nitrogen gas. |
