<p>PURPOSE:To enable retention of a fresh feeling, etc., even in a peeled fruit state for a long period by pretreating a peeled fruit of an early maturing sweet variety of Citrus natsudaidai Hayata with a specific mixture solution, then changing the temperature of the aforementioned mixture solution, treating the peeled fruit again, subsequently replacing the interior of a container with N2 Gas and hermetically sealing the peeled fruit together with a CO2 absorbent. CONSTITUTION:The exodermis of an early maturing sweet variety of Citrus natsudaidai Hayata is prewashed with a 0.1-5% acetic acid solution and then peeled. The resultant peeled fruit is pretreated with a mixture aqueous solution (at 1-5wt.% concentration) of sodium ascorbate with citric acid or ascorbic acid with sodium citrate at ordinary temperature and then subjected to dipping treatment in the aforementioned mixture solution heated to a temperature as high as 90-98 deg.C for 1-10sec. The interior of a container (preferably having 0.1-20co/container.24 hr.atm oxygen permeability) is replaced with N2 gas so as to provide <=2% oxygen concentration and the peeled fruit, together with a gaseous carbon dioxide absorbent, is hermetically sealed in the container to retain the objective freshness.</p> |
