PROBLEM TO BE SOLVED: To provide a soy sauce having a fragrant flavor and a concentrated taste.SOLUTION: A powder soy sauce and the like are dissolved in a dark soy sauce to manufacture a soy sauce having a total pyrazine concentration adjusted to 0.15 mg/l or more, a nitrogen concentration adjusted to 1.0 to 2.0 (w/v)%, and a salt concentration adjusted to 15 to 19 (w/v)%. Such a soy sauce is most suitable for use in fried foods and baked foods, having a more rich taste and umami than a regular dark soy sauce, with a fragrant flavor. |
