PROBLEM TO BE SOLVED: To provide a method for preparing aldobionate products.SOLUTION: Disclosed herein is a method for preparing an aldobionate product from whole or skim milk containing reducing sugars, which comprises the steps of: providing a whole or skim milk containing reducing sugar, introducing purified oxygen to the whole or skim milk; adjusting the pH of the whole or skim milk using a buffer compound; adding to the whole or skim milk a catalase enzyme to form an aqueous mixture of aldobionate products derived from the whole or skim milk; and drying the aqueous mixture to form solid aldobionate products.SELECTED DRAWING: None |
