摘要 The present invention provides a method for processing a food comprising subjecting the food to a treatment with high hydrostatic pressure (HHP) and an endolysin from a bacteriophage of a Gram-positive bacterium. The present invention also relates to food packaged in an HHP-compatible packaging. In a preferred embodiment, the endolysin is present inside such a packaging, preferably in contact with the packed food. In a further preferred embodiment endolysin, e.g. from a bacteriophage of a Gram-positive bacterium, is applied to the food, the food is packed so that the endolysin is inside the packaging and afterwards the packaging is closed and HHP is applied.
