<P>PROBLEM TO BE SOLVED: To provide globular jelly-like food having favorably meltable palate feeling, slightly causing syneresis and/or deterioration in appearance in refrigeration, freezing or normal temperature condition such as canned one, and having temporal stability in quality: and to provide a method for producing the globular jelly-like food. <P>SOLUTION: The globular jelly-like food is obtained through the following process: dropping liquid raw material consisting mainly of starchy adhesive containing alginic acid as a main ingredient, specific processed starch, and maltooligosaccharide-containing sugar into soluble calcium salt solution; stirring the raw material in the calcium salt solution for 5-12 min so as to be formed into a globular one; sealing the globular material in conservatory liquid sugar; and heating the sealed material to make it a globular jelly-like food having a diameter of <10 mm. <P>COPYRIGHT: (C)2007,JPO&INPIT |
