<P>PROBLEM TO BE SOLVED: To provide hydrated β-maltose crystal-containing powder having excellent solubility in an aqueous medium and easily handleable, to provide a method for producing the powder by using a spraying method, and to provide use of the powder. <P>SOLUTION: The hydrated β-maltose crystal-containing powder is produced by forming a maltose-containing solution into massecuite, spraying the massecuite to form powder, keeping the powder in a comparatively low humidity and high temperature atmosphere, and further keeping it in another high humidity and low temperature atmosphere to make α-anomer in the maltose ≥7% and <14% as an maltose isomer, so that the obtained hydrated β-maltose crystal-containing powder contains, in terms of anhydride, ≥86% and <93% maltose and ≥2% glucose and has ≥62% and <72% crystallinity. The powder has excellent solubility in aqueous media and good fluidity and is easily handleable, and therefore its uses for the compositions of various kinds such as food and drink, cosmetics, and medicaments are provided. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
