PROBLEM TO BE SOLVED: To provide a canolol-rich treated product by increasing the production amount of canolol from rapeseed and/or rapeseed meal.SOLUTION: A method of producing a canolol-rich heat-treated product includes processes of: performing alkali treatment of rapeseed and/or rapeseed meal; and performing heat treatment of the rapeseed and/or the rapeseed meal. A canolol-rich heat-treated product is obtained by subjecting the rapeseed and/or the rapeseed meal to alkali treatment and further performing heat treatment on the alkali treated rapeseed and/or rapeseed meal. In the canolol-rich heat-treated product, the treated product of the rapeseed and/or rapeseed meal includes double the amount of canolol of a heat-treated product of rapeseed and/or rapeseed meal. |
