PROBLEM TO BE SOLVED: To provide a method for preventing the rise in gelation temperature due to combination use of collagen and &kgr; carrageenan in manufacturing of a packed collagen-containing gelatinous food; and a collagen-containing gelatinous food which can be manufactured by low temperature filling at 40°C or lower.SOLUTION: In order to prevent the rise in gelation temperature due to combination use of collagen and &kgr; carrageenan in manufacturing collagen, sodium phosphate salt is used. |
