摘要 A method for producing whole-cereal flour by means of high-voltage pulses in collaboration with ultrafine pulverization comprises the following steps: preparing bran, middling and flour by using cereal grains; performing superfine pulverization on the bran and the middling and performing sieving for standby use; preparing a suspension by using the sieved bran and middling, and adding polysaccharide colloids into the suspension; performing high-voltage pulse treatment on the suspension; performing centrifugation to separate a supernatant, and drying the precipitates; and mixing the treated bran and middling and the flour to obtain the whole-cereal flour. By means of the method, the rough taste of whole-cereal flour is alleviated, and the gluten power, the ductility and the viscosity of proteins are improved.
