PURPOSE:To carry out the treatment of a sugar syrup with an enzyme, keeping good contact with the enzyme, preventing the contamination with sundry germs, by reacting the sugar syrup with the endoenzyme in a fluid layer formed in a vertical cylindrical reaction tank by the external circulation device, and extracting from the rotary screen at the top center of the reactor. CONSTITUTION:The sugar syrup A is supplied through the line 26 to the reaction tank 1 to about half of its volume, and a specific amount of the endoenzyme B is supplied through the line 27 to the tank 1. The rotary screen and the circulation pump 23 are started, and the mixed liquid pulled out from the discharge port 25 is ejected through the circulation liquid inlet ports 20, 20' and 20'' tangentially to the cylindrical reactor to form a turbulent fluid layer and to effect the reaction of the sugar syrup with the enzyme with good contact with each other. When the reaction proceeds to an extent, the sugar syrup A is supplied at a specific rate through the line 26. When the liquid livel is raised to the level near the lid 12 of the rotary screen 5, the solid-liquid separation is carried out, the treated sugar syrup is extracted from the line 19 and the enzyme separated by the side wall 11 is scraped off with the brush 14.
