A method of determining the electrical stability of a fluid comprises:
placing the fluid in a gap between a reference electrode (205) having a first potential and a second electrode (210) having a second potential;
coupling the reference electrode (205) and the second electrode (210) with an insulating material (220);
intercepting a path on the insulating material (220) between the reference electrode (205) and the second electrode (210) with a guard electrode (230);
increasing a potential difference between the reference electrode (205) and the second electrode (210); and
measuring the amount of current flow between the reference electrode (205) and the second electrode (210). The fluid may be a water-in-oil or invert emulsion fluid for use in drilling well bores in hydrocarbon bearing subterranean formations
